Oolong Tea
Oolong tea is made from partially oxidized leaves of the Camellia Sinensis plant. The processing involves expert craftsmanship to yield the desired result. The leaves are shaken and gently bruised to rupture cell walls and facilitate a partial oxidation. Oxidation is the exposure of leaves to air during processing to cause a chemical reaction which will affect the flavour of the tea. There is considerable variation amongst oolongs, as they can be oxidized anywhere from 20-80%. Oolong is a lovely choice for those who desire a flavour experience somewhere between black and green tea.
